Flax Seed ( Jawas ) Chutney

Flax seed or Jawas as it is known in Marathi is a good source of fiber an Omega -3 fatty acids ( including Alpha Linoleum acid). flax seeds also contain phytoplankton estrogens called lignans which are similar to estrogen. Due to these, a diet that contains Flax seed is helpful for many health conditions such as obesity, high blood pressure and constipation. The recipe given below is a tasty and savory way to include not only Flax seed but also Sesame seeds which are a good source of calcium in your diet.

Recipe

  • 1 cup Flax seeds 

  • 1/4 cup White Sesame seeds

  • 1/4 cup Black Sesame seeds

  • 15-20 curry leaves

  • 4- 5 cloves garlic 

  • 7-8 dried  Red Chilli Peppers

  • 1/2 cup Peanuts 

  • 1 tbspn Cumin seeds 

  • 1/4 cup desiccated
     Coconut powder ( optional)

  •  1 inch dried tamarind ( optional)

  • 1tbspn  sugar (I used brown sugar)

  • Salt to taste

  1. Roast all the seeds  and peanuts separately.

  2. Take a scant tspn of oil and roast the garlic till it loses the raw smell .

  3. Roast the dried chillies till they darken and the curry leaves till they become brittle.

  4. If using tamarind, roast it for a few minutes too - Just enough to get rid of the rawness and make it brittle.

  5. If you use Coconut powder roast it till it become a light brown color.  My personal preference is to use peanuts and avoid the coconut as using both makes the chutney oilier.

  6. Then grind everything together. Add sugar and salt to taste and mix . If you want the chutney to be spicer you can add additional red chili powder . It is easier to add extra later on , so it's best to start with lesser number of  chillies 

  7. Lastly, while tamarind brings a nice sour note to the chutney, many people prefer to avoid it . You can sub with citric acid ( 1/8th of teaspoon) or just completely avoid adding either
